Spicy Cauliflower Pickle
Spicy Cauliflower Pickle.
Cauliflower is broken into florets and mixed with spice powders. Finally the pickle is tempered with whole spices and left to mature for couple of hours. Serve spicy cauliflower pickle with idly, dosa etc…
Makes: around 2 Cups of Spicy Cauliflower Pickle.
Ingredients:
Cauliflower 1 Small Head
Red Chili Powder 1/2 Cup
Mustard Seeds Powder 1/2 Cup
Salt 1/3 Cup
Oil 1 Cup
Talimpu:
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Chana Dal 1/4 tsp
Fenugreek Seeds a Pinch
Curry Leaves 5
Oil 1 tsp
Method of preparation:
Remove hard stem, break cauliflower into small florets and wash them thoroughly.
Pat the florets with kitchen cloth and let them air dry.
Grind mustard seeds into fine powder using a spice blender.
In a mixing bowl, mix together red chili powder, mustard seeds powder and salt.
Add the cauliflower florets to the bowl and pour the oil.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat and add to above bowl.
Mix the cauliflower pickle well and pour into a dry clean jar.
Seal the jar and let it mature for couple of hours before using.
Serve spicy cauliflower pickle with steamed rice or with idly, dosa etc..
Notes: Make sure to adjust salt accordingly.
Suggestions: You can also add the cauliflower florets in salted boiling water for couple of seconds before straining and air drying the florets.
